Vegan tofu frittata

This vegan tofu frittata is totally delicious! It is simple but tastes amazingly close to the ‘real thing’. Brilliant idea for breakfast or brunch!
Vegan Tofu Frittata is a great option for an easy weekend treat breakfast and not only, of course you can have it for lunch or dinner too! This frittata recipe serves four people and it will take around 45 mins to make this recipe, so you won’t have to spend much time in the kitchen. This tasty frittata is a family-friendly recipe, you can serve it on a bed of fresh salad leaves. If you are having it for breakfast or brunch we suggest serving with baked beans, yummy!
HOW TO MAKE VEGAN FRITTATA
It’s amazingly simple to make! All you need is a few ingredients and a food procesor. The preparation time is also really short and the rest is done by your oven.
This dish is also a gluten-free vegan recipe! We made sure it doesn’t contain gluten yet holds together perfectly well.
A vegan frittata made with tofu will have a similar flavour to an egg-based frittata dish, however the texture will be a little different. Eggs give a baked frittata a lighter and “spongy” texture, whereas tofu will make the vegan versions a bit denser with a “smoother” mouth feel when you bite into it. Nonetheless, the flavours are quite similar and done right with all those mushrooms, green onions and those colourful bell peppers you will hardly notice the difference.
STORING AND FREEZING
Leftovers keep very well in the fridge (covered) for 3-4 days, making it perfect for a work lunch as well. It is freezer friendly for 2-3 months, but there may be some slight changes to the texture as tofu can change a little in texture once frozen and then thawed.
