One-cup serving of sweet potato offers 65 percent of our daily requirement for vitamin C and as much as 700 percent of the recommended daily requirement for vitamin A, also they have a fairly low glycemic index of 17, therefore they are incredibly nutritious, easy to find, easy to store and easy to cook!
Also, if you are trying to manage your weight, it’s good to know that a medium sweet potato can be a healthy, almost fat-free addition to your diet without any cholesterol. Sweet potatoes are surprising low in calories and carbs. Eating the skin of a baked sweet potato won’t add calories, but you will get more fibre, which is important for maintaining digestive health.
HOW TO BAKE SWEET POTATOES!
Our recipe is very straightforward. The main thing that needs considered is the time it takes to bake the potatoes. Firstly, you want to be sure to clean the outsides well to remove any dirt. A vegetable brush is great if you have one, but your hands will work fine too. Next, you will want to poke them a few times all over with a fork or knife, so they don’t explode once they’re exposed to the heat of the oven.
Preheat your oven to 200°C, place them on a baking tray, prick all over and rub them with coconut or olive oil. Next, bake your sweet potatoes in the oven for 45 minutes to an hour
During this time get ready the ingredients that will top up your baked potatoes and Voilà! Easy enough isn’t it!
Once the potatoes are cooked, pile up the goodies, garnish and ENJOY!
