Super easy to make this vegan oatmeal breakfast bars recipe and its oil, gluten and dairy free. I can’t think of a better way to start my day without a healthy breakfast and for me oatmeal bars are the way to go and what is great about this recipe is that it’s totally vegan.
These portable breakfast oatmeal bars are filled with gluten free rolled oats and hazelnuts, peanut butter and soft figs. They are perfect for quick ”grab and go” breakfasts being completely eggless and without flour, making them perfect for those following a vegan, gluten free and dairy free diet. Back in the days I used to think that making your own breakfast bars is difficult, time-consuming or require a bunch of ingredients.

Yes, we have added few ingredients that are not a ‘’must be’’ however when everything comes together the taste is incredible! In terms of texture, they are thick, hearty and soft-baked in the centre. What I love about them is that are filling, delicious and mess-free. You can store them in an airtight container in the fridge for up to 5 days, either slice them up or leave it as a whole. If you are wondering if you can freeze them! Yes! They freeze really well too once they are cooled off completely. Slice the bars into the preferred size and wrap the slice in a plastic wrap. There you have it! The perfect ready-to-go breakfast or snack on the go. Additionally, we drizzled some melted chocolate because, a little chocolate never hurt anyone.
