Dear reader,

Cooking in a hot day of summer is not exactly ideal, it is less enjoyable to spend time in a hot kitchen. So we are presenting a quick and easy cold dish. This one totally fits the bill. Therefore is no actual cooking involved (without the tofu which is optional)  and it comes together in less than 15 minutes.

This is light and refreshing, vermicelli noodle salad can be served as a simple side dish or main course toped up with grilled tofu.

Noodle pasta salads that don’t need cooking sounds a bit strange however when it’s about vermicelli noodles you can skip the boiling part. Noodles that are soft, pliable, and twirlable but haven’t spent any time in a bubbling-boiling water. Yes this is possible, specifically with Asian vermicelli noodles.

What are rice noodles?

Rice vermicelli are a thin form of rice noodles. They are sometimes referred to as rice noodles or rice sticks, but they should not be confused with cellophane noodles. A different Asian type of vermicelli made from mung bean starch or rice starch rather than rice grains itself. Rice vermicelli are a part of several Asian cuisines, where they are often eaten as part of a soup dish, stir-fry or salads.  (source Wikipedia)

We have used the teapot to heat up some water and simply poured it over the noodles that were ready in just a few minutes.

You can make this as spicy as you want. For this reason we love adding fresh, finely chopped red chillies to the salad for a little added heat. Cold Noodle Salad made with rice noodles and fresh veggies is the best cold pasta salad you’ll serve this summer. As a result it’s perfect for your next day lunch meal too!

The dressing for the softened noodles and shredded veggies is a tangy sweet and sour sauce made with maple syrup, mustard and balsamic vinegar.
