Easy and delicious Vegan Carrot Loaf that’s easy to make, healthy and so GOOD!

Nothing says Afternoon Tea if you don’t serve it with a deliciously moist carrot cake, loaded with your favourite spices and topped with a generous portion of vegan cream cheese icing.

You can definitely have it as a dessert but who says you can’t enjoy it for breakfast or snack?!

 I love that it is a smaller size, easier to top up with icing and travels easier than a traditional three-layer carrot cake, perfect when you want to take away as a gift for the holidays, a special treat for friends, family or co-workers and if you have new neighbours moving in, this will be the perfect “welcome to the neighbourhood” gift.

This recipe is a twist on a classic carrot cake with the addition of the raisins and instant coffee that’s why isn’t overly sweet, has veggies and just the right amount of gooey and sweetness in each bite!

Why loaf and not a cake?!

So why to make a loaf cake instead of a carrot cake?! because they’re just so easy to throw together and decorate. No faffing around with sandwiching layers together or anything like that, fuss-free… Also, because this is in loaf cake form… it’s so easy. Pour it in the loaf tin, slather the frosting on top and decorate if you fancy! There’s nothing special to it, other than enjoy every last morsel when you devour it. Literally, every single crumb.

 In this recipe we decided to include some whole grain flour together with regular flour and the result didn’t disappoint.

Vegan Icing for Carrot Loaf

There are a few options for making vegan carrot cake frosting. In this recipe we have made a classic cream cheese frosting and we simply substituted regular cream for a store-bought vegan cream cheese.

Using vegan cream cheese makes the frosting smooth and moreish.
